VEGETABLE PANCAKE

Wanna indulge into something delicious yet healthy. I have you sorted with this super easy to make vegetable pancakes. Packed with proteins and micro nutrients this dish is just soo perfect o kick start your day.

INGREDIENTS
– 1 cup rava / semolina
– 1/4 cup curd
– 1/2 tsp salt
– 3/4 cup water
– 2 tsp oil
– 1 onion (finely chopped)
– 1 carrot (finely chopped)
– 1/2 capsicum (finely chopped)
– 3 tbsp sweet corn
– 5 beans (finely chopped)
– 1/2 tsp chilli flakes
– 1/2 tsp salt
– 2 tbsp coriander (finely chopped)
– 1/2 tsp eno
– 2 tbsp water
– oil (for roasting)
INSTRUCTIONS
1. In a large bowl take 1 cup rava, 1/4 cup curd and 1/2 tsp salt.
2. Add 3/4 cup water and mix well forming a smooth batter.
3. Cover and rest for 10 minutes.
4. Now in a pan heat 2 tsp oil and saute onion until it changes colour slightly.
5. Further, add carrot, capsicum, sweet corn, beans, chilli flakes and salt.
6. Saute for a minute making sure all the vegetables are still crunchy.
7. Transfer the vegetable into rava mixture add chopped coriander and mix well.
8. Also, add 1/2 tsp eno and 2 tbsp water
and mix well forming a frothy batter.
9. Take a pan and heat 1 tsp oil and rava batter spreading uniformly.
10. Cover and simmer for 3 minutes or until the base is roasted well.
11. Flip over and roast on medium flame.
12. Finally, enjoy a vegetable pancake with chutney or sauce.
