SWEET CORN ANGARA

In general we always have corns for snacks but this is an unique recipe where you can make a corn curry and have it with rice or roti. This monsoon season try out a new super easy delicious and extremely flavorful corn recipe for lunch or dinner meals.

INGREDIENTS
– Oil – 1 tsp
– Butter – 1 tbsp
– Cumin seeds – 1 tsp
– Onions – 3 medium size (chopped)
– Ginger garlic paste – 1 tbsp
– Capsicum – 1 medium size (chopped)
– Green chillies – 3 nos (slit)
– Tomato puree -3 medium size
– Salt to taste
– Cashew nut paste – 2 tbsp
– Red chilli powder – 1 tsp
– Coriander powder – 1 tbsp
– Turmeric powder – 1/2 tsp
– Sweet corns – 2 cups
– Water – 200 ml
– Paneer- 100 gm (grated)
– charcoal + ghee (Optional)
– Kasuri methi – 1 tsp ( roasted & crushed)
– Garam masala – 1 tsp
– Coriander leaves – 1 tbsp
METHODS
1) Heat oil & butter in a kadai add cumin seeds and saute for a minute.
2) Add onions and cook until golden brown. Add ginger garlic paste and cook for 2-3 minutes.
3) Add capsicum, green chillies and cook for 2-3 minutes.
4) Add tomato puree, salt, cashew paste, red chilli powder, coriander powder, turmeric powder and cook for 5-6 minutes.
5) Add sweet corns and cook further for 4-5 minutes.
6) Add water to adjust the consistency of the gravy .
7) Add grated paneer, mix well and further cook for 2-3 minutes.
8) Place the charcoal and pour few drops of ghee, cover and smoke for 2-3 minutes.
9) Mix well after the smoke and add roasted kasuri methi and garam masala .
10) Add few freshly chopped coriander leaves.
Serve hot with roti, paratha or naan.
