PRAWN BIRYANI

This is one of those recipes which are easy to make and absolutely delicious as well…just soo perfect for days when u r tired and wanna make some easy pissy dish for meal. Try this out and enjoy on your busy days or weekends.

INGREDIENTS
– Prawn – 500 gm
– Basmati rice- 3 cups
– Onion thinly sliced – 4 nos
– Tomato chopped – 3 nos
– Ghee – 3 tbsp
– Oil- 2 tbsp
– Turmeric powder – 1 tsp
– Chilli powder – 1 tsp
– Coriander powder-2 tsp
– Kashmiri red chilli powder- 2 tsp
– Coriander leaves – 1/2 cup
– Mint leaves – 1/2 cup
– Salt- As per taste
– Diluted coconut milk – 2 cups
– Water- 3 cups
TO MAKE MASALA PASTE
– Garlic-10 cloves
– Ginger – 1 inch
– Grated coconut – 2 tbsp
– Green chilli – 4 nos
– Mint leaves- 1 tbsp
– Coriander leaves- 1 tbsp
WHOLE SPICES
– Cinnamon- 1 inch
– Clove – 4
– Cardamom-4
– Bay leaves – 2
– Star Anise – 2
METHODS
1) Wash the basmati rice . Drain out the water and let it dry completely.
2) To the cleaned prawns add salt , turmeric powder, red chilli powder and mix them well.
3) Grind 1 cup grated coconut and extract the thick coconut milk . Dilute it with water to have 2 cups of coconut milk .
4) Grind ginger, garlic, grated coconut, green chillies, mint leaves, coriander leaves grind it to fine paste adding some water .
5) To a pressure cooker add ghee and oil .
6) Now add whole spices when it splutters add onion .
7) Once the onion turns golden brown, add the masala paste . Saute until the raw smell goes.
8) Now add tomatoes and saute them.
9) After few mins add all the powder spices and salt . Mix well and saute for 3-4 mins .
10) Add mint leaves and coriander leaves give a mix.
11) Now add the marinated prawns to the mixture. Turn the heat to low and mix them.
12) Add the basmati rice and mix well. 13) Pour the 2 cup coconut milk and 3 cups water give it a nice stir .
14) Pressure cook on high flame for 1 whistle . Switch of the flame and let the cooker depressurize to open the lid .
15) Your Prawns biryani is ready to serve hot with raita .
