PALAK ALOO PARATHA

Winters are incomplete without steaming hot parathas and when it’s the palak season how can u miss in the very tempting palak parathas.
.
INGREDIENTS
– Wheat flour – 2 cups
– Spinach – 300 gms ( chopped )
– Boiled potatoes – 3 medium size
– Besan – 2 tbsp
– Oil -4 tbsp
– Carom seeds -1/4 tsp
– Cumin seeds – 1/4 tsp
– Asafoetida ( hing) – 1 pinch
– Coriander powder – 1 tsp
– Green chili -2 (finely chopped)
– Red chili powder -1/4 tsp
-Turmeric powder – 1/4 tsp
– Ginger paste – 1 tsp
– Salt – As per taste
METHODS
TO MAKE DOUGH
1) Take 2 cups wheat flour in a mixing bowl, add 1/2 tsp salt, 2 tsp oil to it. Add water as required to knead the soft dough . Cover and keep the dough aside for 20 minutes.
TO MAKE STUFFING
1) Take 300gms spinach wash and remove the stalk and chopped the leaves.
2) Heat a pan add 2 tbsp besan roast it dry. When it changes color and roasted well, then take it out in a bowl.
3) Heat 2 tsp oil in a pan and add carom seeds , cumin seeds, 1 pinch asafoetida, turmeric powder, ginger paste, chopped green chilli. Slightly roast the spices,now add chopped spinach leaves. Mix them well.
4) When spices mix well, crumble and add potatoes. Then add salt, red chili powder, coriander powder and mix it well. Cook for 2-3 minutes.
5) Now add roasted besan , mix it well and cook for 1-2 minutes. Once ready take out the stuffing in a plate.
TO MAKE PARATHA
1. After the dough has rested for 20 minutes, knead slightly. Now pinch a ball sized dough and roll about 4 inches in diameter.
2) Place a ball sized prepared palak aloo
stuffing in the centre.Take the edge and start pleating bringing it to the centre.
3) Also join the pleats together and
secure tight pinching off excess dough.
4) Sprinkle some wheat flour and roll slightly thick.
5) On a hot tawa place the rolled paratha and cook for a minute ,flip the paratha when the base is partly cooked after a minute .
6) Brush oil and press slightly. Flip again once or twice till both the sides are
cooked properly.
Finally, serve hot palak aloo paratha with sauce, pickle or raita.
