INGREDIENTS
TO MARINATE THE FISH
– Ilish / Hilsa fish – 6 pieces
– Turmeric powder – 1/2 tsp
– Salt – 1/2 tsp
FOR RICE
– Basmati rice- 500gm
– Refined oil – 2 tbsp
– Salt- 2 tbsp
– Bay leaves- 2
– Mace (Javitri) – 2 pieces
– Cardamom – 4
– Cloves- 4
– Cinnamon stick-1inch
– Shah Jeera – 1/2 tsp
FOR GRAVY
– Mustard oil – 4 tbsp
– Ginger garlic paste – 1 tbsp
– Onion paste – 2 tbsp
– Salt- As per taste
– Green chilli- 4 slitted
– Yogurt (beaten) – 3 tbsp
– Kashmiri red chilli powder – 1 tsp
– Cumin powder -1 tsp
FOR BIRYANI
– Birista (fried onion) – slice 2 medium onion fry in oil till golden
– Saffron milk – Take 1/2 cup of warm milk and soak 15 saffron stands.
– Biryani masala- 1 tsp
– Pepper powder- 1/2 tsp
– Ghee -4 tsp
METHODS
1) Boil water and add salt, whole garam masala, bay leaves & refined oil. Mix it well.
2) Add soaked basmati rice. Cook the rice 80% and then strained out the water.
3) Add 4 tbsp mustard oil in hot pan. Fry the fish only a minute both side. Remove and keep aside.
4) Now add onion paste and saute for 3-4 mins- Add ginger garlic paste and cook till the raw smell goes.
5) Now add cumin powder, kashmiri red chilli power, slitted green chilli and salt to taste and saute till oil separates.
6) Now add yogurt and mix well saute for 3-4 mins . Add little water when water boiling add fried fish . Cover and cook for 5 minutes in medium flame . Turn off the gas oven .
LAYERING THE RICE AND COOKED FISH
1) Take a heavy battom pan and brush with 2 tsp ghee on the base of the pan. 2) Spread half the cooked rice as the 1st layer . Spread gravy uniformly arrange the fish pieces side by side on top of the gravy. Add fried onion half , sprinkle some biryani masala, pepper powder , saffron milk and 1tsp ghee.
3) Repeat the same process of sccond lyring of the rice .
4) After this close the lid and use some wheat dough for make the lid air tight .
5) Now cook for 15 mins in low flame . After 15 mins put off the gas oven and keep rest it for 10 minutes.
Hilsa biryani is ready to serve .
