BUTTERSCOTCH ICE-CREAM

This summer enjoy a blast of flavors with my very special ice cream recipe. This has some special ingredients which makes your home made ice cream taste like the store ones. INGREDIENTS
– Milk – 1/2 Litre
– Cornflour – 1&1/2 Tbsp
– GMS ( foam booster ) – 1 Tbsp
– CMC ( alginate) – 1/4 Tsp
– Sugar – 5-6 Tbsp
– Butter Scotch essences – 1/2 Tsp
– Yellow color – 1/2 Tsp
– Cream – 1/2 Cup
FOR FUDGE
– Butter – 2 Tbsp
– Cream- 2 Tbsp
– Sugar- 2 Tbsp
– Mix nuts (walnuts ,cashew, almond) – 4 Tbsp
METHODS
1) Divide the milk into two parts. One part is heated & to the other part add cornflour, GMS & CMC Powders. Mix the powder thoroughly & strain it.
2) Add this mixture to the milk, which is heated & boil the milk till it thicken .Stir continuously.
3. Remove it from the fire after 3-4 mins add sugar as per taste .
4) Allow it to cool. And keep it in the freezer for setting .
5) After 6-8 hours when it is set, beat it nicely till it becomes fluffy. Add fresh cream, yellow color, butterscotch essence beat it nicely. Again keep it in the refrigerates for settings .
6) After half an hour add fudge pieces.
TO MAKE FUDGE
1) Cook two tbsp butter, 2 tbsp cream, 4 tbsp dry fruits, 2 tbsp sugar in a pan.
2) Keep stirring this mixture till it starts leaving the sides of the pan, Pour on the greased dish & break into Pirees.
