BRINJAL MASALA CURRY

After the whole Diwali week we are back to basics with this curry recipe. Super simple easy to make recipe. Very light on palate. Checkout the recipe for more details.

INGREDIENTS
OIL – 1 TBSP
CORIANDER SEEDS – 1 TBSP
CUMIN SEEDS – 1 TSP
ONION – 2 CHOPPED
GARLIC CLOVES – 6 NOS
SLICED GINGER – 1 PIECE
GREEN CHILLI – 2 NOS
PEPPERCORNS – 1 TSP
CHOPPED TOMATO – 2 NOS
GRATED COCONUT – 1/2 CUP
SALT – AS PER TASTE
TO MAKE BRINJAL MASALA CURRY
BRINJAL – 1/2 KG
OIL -2 TBSP
CINNAMON – 1 INCH
CLOVES – 4
CURRY LEAVES FEW
TURMERIC POWDER – 1/2 TSP
SALT AS PER TASTE
SUGAR AS PER TASTE
CHILLI POWDER – 1 TSP
CHOPPED CORIANDER LEAVES
METHODS
1) Firstly cut the brinjal in to 4 parts. Sook them in water.
2) Heat 1 tbsp oil in a pan and add coriander seeds, cumin seeds , chopped onion, garlic, ginger & green chilli saute for 2-3 minutes.
3) Now add peppercorns , chopped tomatoes , salt and saute for 3-4 minutes .
4) Add grated coconut saute for 2 minutes on low flame.
5) Transfer to a blender once cooled completely. And blend into a smooth paste adding little water. Keep aside.
6) Heat 2 tbsp oil in a pan add cinnamon, clove and few curry leaves allow to splutter.
7) Now add brinjal fry for a minute and add salt, turmeric powder, red chilli powder and saute for 2-3 minutes.
8) Add prepared paste and mix well .
9) Add little water and 1/2 tsp sugar . Cover and cook on low flame for 5 mins. 10) Remove the lid and add freshly chopped coriander leaves . Brinjal masala curry is ready to serve hot with rice, roti & paratha.
