ALOO BAINGAN DHABA STYLE

This is an easy recipe to ample up your regular veggies in a good way. Super healthy and just soo perfect for a regular meal. Pair it up with rice or roti and you are good to go.

INGREDIENTS
– Brinjal, cut into slices- 350 gms
– Potato, sliced- 250 gms
– Crushed Ginger-Garlic-Chilli:
– Ginger, sliced- 1 inch
– Garlic, cloves- 6-7
– Green Chillies- 3 nos
Tempering:
– Cumin Seeds- 1tsp
– Bay Leaf- 2
Spice Powders
– Turmeric Powder- 1/2 tsp
– Red Chilli Powder – 1 tsp
– Coriander Powder- 2 tsp
– Kashmiri Chilli Powder- 1/2 tsp
– Cumin Powder-1/2 tsp
– Kasuri Methi- 1 tbsp ( roasted and crushed )
– Garam Masala Powder- 1/4 tsp
Other Ingredients:
– Onion chopped- 2 medium
– Tomatoes chopped- 2 medium
-Oil- 4-5 tbsp
– Salt- As per taste
– Sugar – 1/2 tsp (to balance the taste )
METHODS
1 ) Heat oil in a kadhai and add the cumin seeds and bay leaves.
2) Give a stir and then add the crushed ginger, garlic and greenchilli. Fry on medium heat for 2 mins and then add the chopped onions. Give a mix and add 1/2 tsp salt.
3) Fry on medium heat for 8-9 mins till light brown. Now add the chopped tomatoes and fry on medium heat for 2 mins.
4) Now add turmeric, red chilli powder, coriander powder, cumin powder and kashmiri red chilli powder give a mix and fry on medium heat for 3-4 mins till the tomatoes are soft and the spices are cooked.
5) Now add the potato slices, give a mix and fry on medium heat for 3-4 mins.
6) Also add the brinjal slices, add 1 tsp salt and fry 1 min on medium heat.
7) Cover and cook on low heat for 10 mins.
8) Now add 150 ml water, give a mix and cover &cook on low heat for another 10 mins.
9) Now add the Kasuri Methi, Garam Masala powder and sugar give a mix and simmer for 2-3 mins.
10) Lastly garnish with chopped coriander leaves.
